Why is figuring out dinner so hard? I want to be eating healthy, keep my family eating healthy, and do it all easily and quickly with no stress. Is that too much to ask? But this dinner has helped make it a tad easier for me. It’s quick and easy and I can prep it ahead of time if I need to!
The other thing I love about this recipe is that it can be changed and altered to whatever other you’d like to have inside! And did I mention it was a crockpot style dinner? Yeah, it just keeps getting better.
First I brown the meat and add the seasonings. While that is cooking, I steam the cauliflower in a separate pot. Then I add everything together and mix it up! I chop the peppers off, clean the insides, and then throw them in the crockpot. That’s it! Turn it on for about four hours on high and you’ve got some yummy peppers to eat!
