I do my food shopping once a week with little trips in between for fresh fruits and veggies. But that means I usually freeze my chicken that I plan to use later in the week so it doesn’t go bad before I use it. But this also means that there are a few days where I go to make dinner around 4:45pm and I’ve forgotten to thaw the chicken!
Normally that means I have to make something else for dinner- maybe black bean tacos or some other meatless meal, which is fine for when I actually have those things on hand. If not, I’m stuck! So when I found this package the other day at Kroger I was excited to have found the answer to my dinner-making problem!
It’s called Freezer to Plate by the Good Table. Do you see two other reasons why I need a quick dinner idea? The two boys were under the table playing peek-a-boo with each other between the rungs of the chairs!
Everything you need is in the box with easy to follow instructions on the back! It didn’t take long to throw together and pop in the oven!
All I had to do was dump the uncooked rice and seasonings in a 9×13 pan, add some water, and then put the frozen chicken on top. There is a seasoning sauce packet to put on top of the chicken, then you cover with foil and bake for 45 minutes! That’s it!
Don’t judge my 9×13 pan. It’s been with us for almost 10 years now, so it’s showing some signs of being well-loved! While it was cooking, I cut up some avocado and made a simple salad to go alongside our main dish! It was laughably easy and I was so happy to have found this magical box I can keep in my pantry until I’m in a pinch!
