The morning is tough for me. I wake up hungry and tired, and I need to eat pretty quickly or I get grumpier than I already am. But I also need coffee at the same time. There’s a small window for eating and getting coffee in my system in the morning so that I’m nice.
You guys get it. Mornings aren’t always the best.
Something that has helped is to have breakfast at the ready, easy to grab and eat. Even with one baby in my arms and another waiting at the table for his breakfast. I started playing around with overnight oats and have found some fun variations that have satisfied my stomach and kept me full!
Berry Overnight Oats
1/2 cup greek yogurt
1/2 cup rolled oats
2/3 cups milk
1/2 tsp vanilla
2 T honey
1/2 banana, chopped
1/3 cup frozen berries
I layered all ingredients in a jar then poured my milk over top to fill the jar. Depending on how you like the consistency of your oats will change the amount of milk you add to your jar. I tried a lot of different combinations, but this one was my favorite!
