I’ve learned that making dinner is harder with two kids. That was sort of expected, but I’m really feeling it now. So every time I come across a dinner that’s healthy and delicious but also quick and easy to pull together, I am all in. And on top of all of that, I can easily make it double and freeze some for another busy night. Win-win-win-win.
Here’s what you need to pull together:
– 2-3 chicken breast cut in to bite sized pieces
– 2 lemons, squeezed for their juice
– 4 tablespoons olive oil
– 1 tablespoon minced garlic
– 1 tablespoon parsley
– a whole bunch of veggies
I mix the sauce up first- lemon juice, olive oil, garlic, and parsley. Then I add the chicken breast pieces to the sauce. AND THEN THE VEGGIES. You can use frozen veggies or any fresh veggies you have on hand. What I normally chop is red potatoes, sweet potatoes, frozen green beans, zucchini, squash, and carrots.
Then I just dump everything in the sauce with the chicken and mix it around. Then I bake it in a 9×13 dish for about 25 minutes, or until the chicken is done. That’s it! Easy meal packed with veggies.
If you feel like you need more sauce, add a little bit more lemon juice and olive oil to make sure all the veggies and chicken are coated. I’m sure it would be pretty easy to mix up the veggies to exactly the ones you liked– or even just add all frozen veggies for an even quicker meal without any chopping veggies.
