Guys. Whoa. If you want to step up your potato game, this is how. These smashed potatoes with avocado aioli are beyond what I could ever have imaged potatoes could be.
Dramatic? Yes. Maybe a little. But really, make these and you will totally agree with me.
I pinned this straight from my sister’s Pinterest board to my Foodie board. She is a vegetarian and always has new and interesting ways to make foods, so I browsed her pins. Mine didn’t look exactly like hers, but they were ah-may-zing. So I didn’t get all that caught up in the potatoes looking great.

Back to the potatoes. I was intimidated at first because they look super fancy, but they were way easier than I thought. I was pumping myself up in the kitchen trying to prep myself for a long, drawn-out process of making these crazy potatoes, and they were simple! YES!
Boil your potatoes.
While your potatoes are boiling, make the aoili sauce. To be honest, I used sour cream instead of mayo and almost doubled the amount because I knew I wanted a lot of sauce. Can’t run out of sauce. Not this sauce anyway. Below is how I made mine.
1 large avocado
1 large garlic clove
1 lemon, squeezed for juice
1 cup sour cream
Salt and Pepper
Blend all ingredients in a blender. Add salt and pepper to taste.
Smash those potatoes
Place boiled, soft potatoes on a greased cookie sheet, and smash with the bottom of a cup or glass. Drizzle olive oil on top, salt and pepper, and garlic powder. Bake for 20-25 minutes at 350 degrees.
Pour on that sauce
So drop what you are doing right now, and go get some potatoes so you can experience these.
