I have so many dinner ideas pinned on Pinterest, and when I actually get around to looking at them and making them I normally am pleasantly surprised! When I see “quick dinner meals” I’m pretty skeptical. But this one actually makes a great dinner in one skillet and I love it.
I wrote the first experience of making the dinner here, which was about four months ago. And it’s been on constant rotation since.
The original recipe can be found here. The only thing I changed was using chicken sausage instead of the turkey sausage, but I imagine you could use any type of sausage or meat you prefer.
My favorite part about this meal is you can really throw whatever you have into it. If you don’t have red pepper, use green. If you forgot to pick up red potatoes, use sweet potatoes. Frozen green beans? Add ’em. Corn and zucchini all you have left in the fridge? Add those too!
