Snowbound

When it snows and I’m stuck inside, all I want to do is bake. And eat. And lounge around. It’s a vicious cycle. Eat, lay around, bake. Eat, lay around, bake. And since our city just got over 12 inches of snow dumped on us, I’ve been baking a lot.

I made some vegan chocolate cookies. This recipe is perfect for me and my egg allergy. It calls for ground flax seed mixed with almond milk to replace the egg. I haven’t used this mixture as an egg replacer before, and I was pleasantly surprised. I might even use this idea to replace egg in other cookie recipes…. yum. I made some mixed berry pancakes. {I didn’t add the egg- I just skipped that whole part and added a little extra sour cream.}

I’m thinking about making some more of my Oat Energy Bites, which are delicious. I just whipped up some of this soup for dinner last night. I didn’t use the bacon, and I replaced regular sausage with all natural chicken apple sausage. DELISH.

What’s your favorite thing to make/bake/cook/eat/do when you’re snowed in? I’m hoping not to be the only one out there whose favorite thing is to eat and bake!
